One of my fondest memories in our Texas family was on weekends, when we would simmer a pot of pinto beans on the back of the stove all day. We added lots of bacon, tomatoes, and savory spices. Then we'd dish up a bowlful and eat them with buttered flour or corn tortillas, cornbread, or homemade bread, whatever we had on hand, dipped into the thickened, tasty broth. We ate them alongside BBQ, hamburgers or hotdogs, and Mexican food. We mashed them and refried them and made burritos or served them with our eggs at breakfast. Such a versatile food!
