A hearty, thick & creamy soup loaded with chunks of chicken and all the delicious flavors of spicy, cheese enchiladas. Ladle it up into a bowl, sprinkle some crushed tostada chips and a little shredded cheese over the top, then finish it off with a dollop of sour cream....easy to make, but even better to eat!
To complete this recipe, you will need:
1-1/2 - 2 c. cooked chicken OR a 12.5-13-oz. can chicken, drained
8 oz. American cheese
Crispy restaurant style tostada chips (optional)
Cheddar cheese, shredded (optional)
Sour Cream (optional)
